One of the neatest features of FireFox is the use of extensions. These extensions (much like plug ins) add new functions to FireFox, allowing you to customize your browser like no other. This list is by no means inclusive. There are well over 100+ extentions available. One problem you may encounter is, as FireFox releases newer versions, some of these extentions simply won't work. The quickest way to check for updates is through the browser itself. Tools=>Extensions=>Update. The best way is to visit the homepage of the extention itself. This way you're assured of getting any updates as they become available. Some of the more popular extensions include:
All-in-One Gestures- Allows you to use mouse gestures similar to those found in Opera Browser. Also rocker navigation, and scroll wheel navigation.
Gmail Notifier- If you're one of the lucky people to have a GMail beta account, once you try this extension, you'll wonder how you lived without it! It sits in the FireFox status tray and alerts you of any new GMail. Options include automatic logon, frequency of checks, and whether or not to open in a new tab.
Adblock- As the name implies, it blocks ads, and very effectively. Just right-click the offending image and choose Adblock, and it's gone.
Make Link- If you frequent a lot of forums, or generally post a lot of URLs, this is one comes in handy. You can create a forum, HTML, or text link by right-clicking and choosing Make Link from the context menu.
SpellBound- A spell checker for FireFox. More here... cuneAform - Adds an (X)HTML Editor to FireFox. I couldn't get it to work with Tabbrowser Extensions, but it is a handy bit of code to edit small pieces of HTML including WYSIWYG.
Googlebar - In no way supported by Google, Googlebar replicates it's namesake in almost every way except PageRank, and according to the home page, that's by design.
StumbleUpon- If you're bored out of your skull, and want to have a bit on community interaction of sorts, then check this one out. What it does is let you "StumbleUpon" web sites that were deemed "I Like It!" from the StumbleUpon toolbar. As you click the "Stumble!" button, you choose whether or not a site is within your taste or interests, or not. You have to check it out to appreciate the uniqueness of this extension.
BBCode- Allows formatting for forum posts like Invision, phpBB, and others, making quick work of pasting BBCode. 
Mozilla Archive Format - Allows you to save web pages in a single archived file which can be viewed with FireFox.
And finally, my favorite extension, Tabbrowser Extensions. This extension should be part of Mozilla's FireFox v1 release. That's how good it is. It gives you almost total control tab browsing. Here's just a rough idea on what this extension can do: From the tab right-click context menu - Drag and drop tabs in any order.
- The tab bar can be placed on top or bottom.
- You can recall a closed tab.
- Change the tab color.
- Show a progress bar on the tab.
- Auto reload any tab at a desired interval
- Set a label of a tab.
- Lock a tab.
